Broccoli ‘Burgers’ 

I made these for two 3 year olds and a 14 month the other night, they ate them really well. This is actually a picture from my sons breakfast this morning though. I was surprised to hear him ask for them for breakfast! This is a simple recipe with a dairy free option. It makes about 12 patties, I froze the ones I didn’t use. 

Equipment required 

1 food processor 

2 baking sheets 

Baking paper for lining 

Shopping list makes 12 patties

1 small head of broccoli (300g) 

2 cobs of corn  

1 scant cup of plain flour, I used Gluten free 

3 medium/lrg eggs 

1/3 cup olive oil 

Pinch of salt 

Small bunch of fresh chives 

Large handful grated mature cheddar (optional)

Method to the madness 

Preheat oven to 180C

Process the broccoli until it’s a rice like consistency 

Cut the corn off the cobs and add to processor with remaining ingredients (apart from cheese)

Process until well combined 
Stir in grated cheese (if using)
Scoop out the mixture with a large spoon and form into patties on a lined baking sheet 

Bake for approx 15-20 minutes until slightly golden and cooked through 

You could serve these in burger buns with all the trimmings or just as is with your favourite sides
