Cauliflower Tabbouleh 


Cauliflower is a low carbers best friend in my opinion. So versatile, so tasty! Try this cauliflower tabbouleh the next one you need a quick and easy side dish or main meal. 

Equipment required 

1 food processor 

1 citrus juicer 

Shopping list serves 4 as a side 

1 medium head of cauliflower 

4 spring onions 

2 medium tomatoes 

1 medium bunch of fresh parsley 

1 medium bunch of fresh mint

1.5 lemons 

4 tbsp of Avocado oil 

Salt and pepper 

Method to the madness 

Remove the outer leaves and core from the cauliflower and process until you get a rice like consistency 

Finely chop the mint and parsley 

Deseed the tomatoes and finely dice 

Finely slice the spring onions on an angle

Juice the lemons and add the avocado oil, season with salt and fresh black pepper to taste 

Stir the dressing through the cauliflower until it is all well coated. Stir through the tomatoes, spring onions and the majority of the herbs, sprinkle the remaining herbs on top

Serve by itself or as a lovely side to your fav protein
