Apricot & Coconut Bliss Balls 

Bliss balls are such an easy go to for snacks, although so many are packed with sugar! Be it unrefined or not, when it comes to raising your blood sugar it’s all the same. This recipe makes a large batch, so feel free to halve it. If you try them out let me know! 

Equipment required 

Food processor 

Shopping list makes about 40 balls 

1/2 cup dried apricots 

1/2 cup smooth almond butter 

1/2 cup of brown rice syrup (maple or honey for paleo but you may need less) 

1/2 cup of sunflower seeds 

1/2 cup of pumpkin seeds 

1/2 cup of pecans 

1 cup of coconut chips or dessicated coconut 

Sprinkle of salt 

More dessicated coconut for rolling (optional) 

Method to the madness 

Process the almond butter, apricots and rice syrup until you get a gulgy paste 

Next add the seeds and nuts and blitz for a few seconds until well combined 

Next add the coconut and the salt and give it one final blitz until the mixture can hold by being pressed together 

Roll the mixture into bite sized balls, leave as is or roll in extra dessicated coconut 

Store in the fridge until you are ready to eat them
