Curried Carrot Fritters 

If you follow my blog, you know I love veg fritters. This has a little Indian twist, really flavoursome and very easy to make. Perfect for a quick, simple breakfast. 

Equipment required 

1 mixing bowl

1 lrg fry pan 


Shopping list (for 2 people) 

2 medium carrots 

1 tsp mild curry powder 

1/4 tsp salt 

1 tsp black sesame seeds 

2 lrg eggs 

3 tbsp ground almonds 



1 sml tub coconut yoghurt (125g)

Juice of half a lime

Sprinkle of salt 

Small handful of parsley 


Splash of oil (I used avocado oil)

Method to the madness 

Grate the carrots and add to the mixing bowl – add all the other ingredients (except for the yogurt and oil) and mix thoroughly 

Add some oil to the pan and place approx 1 heaped dessert spoonful of mixture per fritter, cook until golden, then flip and cook on other side until golden 

Meanwhile roughly chop the parsley, squeeze the lime and mix into the yoghurt, taste for seasoning 

Top the fritters with yogurt, mine made 3 fritters per serve
