Cheesey Breakfast Fritters 

These could not be easier, or tastier. Leave off the sausage for a delish vege breakfast. You can add mushrooms or slow roasted tomatoes too! 

Equipment required 

1 mixing bowl 

1 fry pan 

Shopping list (for 2 people) 

1/4 cup of ground almonds 

1/4 cup of grated mature cheddar 

2 lrg eggs

Small bunch of parsley and chives 

1/4 tsp of salt – I used a herb salt 

Knob of butter 

Method to the madness 

Roughly chop the herbs.

Mix all the ingredients together in a bowl, until well combined.

Heat the fry pan to a medium heat and melt the butter.

Dollop a tbsp of mixture at a time into the pan and cook until golden on both sides.

Sprinkle with a little more cheese and some more herbs if desired
