Peanut butter & Chocolate Fudge 

I love recipes that can be whipped up with minimal fuss and eaten in no time at all! This ‘fudge’ fits the bill perfectly. If you are hankering for a sweet treat these can be in your belly in about 20 minutes, and 15 of those they are just hardening in the freezer. Win! If you have a peanut allergy you can always use another nut or seed butter. 

Equipment required

1 small saucepan 

1 small baking tray 

Baking paper 

Shopping list 

1 cup of natural crunchy peanut butter 

1/3 cup of coconut oil 

1/4 cup of raw natural cocoa powder 

1/4 cup of brown rice syrup or maple syrup 

1 tsp vanilla 

Pinch of salt 

Small handful of freeze dried strawberries (optional) 

Method to the madness 

Heat the saucepan to a low heat and add the coconut oil, once it’s melted turn the heat off and add all the remaining ingredients, except the strawberries, mix well 

Pour the mixture onto a lined baking tray and sprinkle with the freeze dried strawberries – if they are whole you may want to crush them slightly. Softly press the strawberries into the top of the fudge 

Place the fudge in the freezer for a minimum of 15 minutes, then slice and serve immediately 

You can try it with lots of different toppings, get creative
