Creamed Corn

I’ve been eating creamed corn since I can remember. One of my Dad’s favourite things on toast. It used to come from a tin in our house… have you ever looked at the ingredients! It really takes no time at all to make this at home. I have made a dairy free version because my son isn’t having dairy at the moment, but you can add lashings of butter if you choose. 

Equipment required 

Blender or food processor 

Medium saucepan 

Shopping list serves 2 

4 cobs of corn dehusked 

1 medium onion 

1 tbsp of nutritional yeast 

Pinch of cayenne pepper

1/4 cup of oat cream 

1 tsp vegan bouillon 

Splash of your fav oil, I used rapeseed  

Method to the madness 

Remove the kernels from the corn 

Finely dice the onion 

Heat the pan to a medium heat and add a splash of oil

Add the diced onion and sautée until nearly translucent, add the sweet corn and cook for a further 2-3 minutes 

Add the oat cream, bouillon and cayenne and mix through, cook for a further 2 minutes until the corn is cooked 

Add the mixture to the blender and blend for about 15 seconds, depending on the power of your blender. You don’t want it to be completely smooth, some texture is nice 

Serve along side your fav protein, it is especially nice with bacon!!
