Crispy Cauliflower Cheese 

A classic side, given a crispy coating! This dish is next level delish. I actually ate the whole thing as my main, but normal people would serve it as a side, I’m sure. Guaranteed to be a family favourite, cook it up, eat it up! 

Equipment required 

1 small saucepan 

1 baking sheet  

Baking paper 

Pastry brush 

2 flat bowls for crumbing 

Shopping list 

1 small head of cauliflower 

1/2 cup of GF breadcrumbs, I used rice crumbs 

1 tsp dried oregano 

1 tsp onion salt 

1 tsp paprika 

2 eggs 

1/4 cup of rapeseed oil 


1/2 cup of your fav grated cheese, I used a combo of cheddar and Parmesan 

1/2 cup creme fraiche 

1 tbsp of garlic dip, I used Organico brand – you could sub with 2 cloves of roasted garlic 

1 tsp arrowroot powder, plus splash of water 

Small bunch of chives 


Runny raw honey 


Method to the madness 

Preheat your oven to 200C Fan 

Line your baking sheet with baking paper 

Whisk the eggs in one bowl, in the other bowl mix together the crumbs, herbs and spices 

Cut the cauliflower into florets 

Coat the florets in egg and then in the crumb, until well coated, place the florets onto your lined baking sheet 

 Once the florets are all crumbed, drizzle the oil, using the pastry brush, over the crumbed florets. Bake the florets in the oven for about 25 minutes 

Grate your choice of cheeses. Finely chop the chives 

Heat the saucepan to a medium low heat and melt the cheese in the pan. Add the creme fraiche and mix throughly 

Mix the arrowroot with a small amount of water in a small cup. 

Once the cheese is melted and mixed, add the garlic dip and mix through

Turn up the heat until it is bubbling and add the arrowroot mixture, now turn the sauce down to low and mix constantly until the sauce thickens 

Turn off the heat and add most of the chopped chives, saving some for garnish 

Once the cauliflower is golden and crispy remove from the oven and place on your serving dish. Pour the cheese sauce over the cauliflower. Top the dish with the remaining chives and a drizzle of honey.
