Cloud Bread 

I have been meaning to make these for years and years – not sure why I didn’t do it before, they are so easy and delish. They are a great low carb bread alternative and you can control the ingredient quality, unlike in processed low carb options. They are natural and gluten free so even if you aren’t low carb you should give these a go. 

Equipment required 

1 electric whisk, I used a kitchen aid 

1 mixing bowl 

2 baking trays 

Baking paper  

Shopping list makes 6 

2 eggs, separated 

2  tbsp full fat cream cheese, about 70g 

1 tbsp milled flaxseed (optional) 

Pinch of salt 

Pinch of cream of tartar 

Method to the madness 

Preheat the oven to 180C 

Line the baking trays 

Beat the egg whites with a pinch of cream of tartar until stiff 

Meanwhile mix the cream cheese, egg yolks, salt and flaxseed until smooth 

Fold the egg yolk mixture through the egg white mixture and spoon onto baking trays 

Bake for around 10-15 minutes until golden, mine were still a little spongey, like little clouds
