Kale & Goats Cheese Salad 

I had no idea what to make for dinner tonight, but I have to say this turned out beautifully. A simple salad with gorgeous flavours that packs a nutritional punch. 

Equipment required 

1 large mixing bowl 

1 small saucepan 

Spiralizer or grater 

Shopping list (for 1 person as a main, 2 as a side) 

2 lrg handfuls of kale 

Juice of 1/2 a lemon 

Pinch of salt 

1 sweet potato 

30g soft goats cheese 

2 spring onions 

Handful of pinenuts 

A few splashes of your fav oil, I used avocado 

Method to the madness 

Peel and spiralize your sweet potato

Heat up the small saucepan to a medium heat add a generous amount of oil and sautée the sweet potato for about 5 minutes, until soft and cooked 

Meanwhile massage the kale with the lemon juice, a sprinkle of salt and a splash of oil – massage for about 1 minute until slightly wilted 

Slice the spring onion thinly on an angle 

Once the sweet potato is done remove from the pan and set aside to cool a little 

Use the same pan to toast the pinenuts on a medium heat, until golden 

Assemble the salad by adding the sweet potato, onions and goats cheese to the kale, mix gently 

Top with toasted pinenuts and serve along side your fav protein
