Chocolate & Cinnamon Donuts 

I’m calling these donuts, but that’s really just the shape isn’t it! I can’t say they beat a freshly fried hot cinnamon donut, I would be lying… I can say that these are much better for you and taste great. I brushed mine with melted chocolate but you could easily just sprinkle cinnamon coconut sugar over the top. They can be on your plate in 20 minutes… Let me know if you can stop at just one. 

Equipment required 

1 donut tin 

1 mixing bowl

1 small saucepan 

Shopping list (makes 6) 

1/4 cup coconut flour 

1 tsp baking powder 

1 generous sprinkle of salt 

70g melted butter 

1/4 teaspoon gated or ground nutmeg 

1/2 tsp cinnamon (more for sprinkling) 

1 tsp vanilla 

3 eggs 

1/2 cup of sour cream 

1/4 cup of coconut palm sugar 

50g dark choc min 70% if you wish 

Method to the madness 

Preheat the oven to 190C 

Melt the butter in the saucepan and mix with the sugar and vanilla 

Place the dry ingredients into a bowl and mix together, make a well in the dry ingredients 

Once the butter mixture has cooled slightly whisk it with the eggs and sour cream 

Combine the wet and dry ingredients and spoon them into a greased donut pan

Bake for about 12 minutes until they are springy and cooked through 

Let them cool and brush with melted chocolate and sprinkle with extra cinnamon and sea salt or dip them in melted butter and roll them in cinnamon mixed with coconut sugar
