Mushroom & Bacon Breakfast Salad 

Bacon & Mushroom Breakfast Salad

Sometimes I just get sick of eggs – so egg free today! Full of yummy flavours and good fats and very easy to throw together quickly. 

Equipment required 

1 lrg fry pan

1 mixing bowl 

Shopping list for 1 person 

4 rashes of streaky bacon 

2 lrg portobello mushrooms 

1/2 avocado

5 cherry tomatoes 

2 handfuls of kale 

Juice 1/2 lemon 

Splash avocado oil 

Pinch good quality salt 

Method to the madness 

Heat the fry pan to a medium high heat and cook the bacon until crispy 

Meanwhile massage the kale with lemon juice, sprinkle of salt and a splash of oil until slightly wilted 

Slice the portobello, once the bacon is cooked, remove it from the pan and fry the mushrooms off in the bacon fat 

Slice up the cooked bacon

Dice the avocado and add to the massaged kale 

Slice the tomatoes in halves

Now assemble the salad in the bowl placing the leaves at the bottom and topping with the remaining ingredients

ENJOY!
