Prawn & Butternut Noodle Soup

We all know chicken soup is good for the soul and a cure all. Do we all know why? The stock! Homemade stock is a wonderful source of minerals that supports the immune system and collagen that helps heal the lining of the gut. So, here’s another way to get the glorious benefits of stock. Super easy, super quick and super yummy. 

Equipment required 

1 medium sauce pan 

1 small frying pan

Small baking tray 


Shopping list (for 2 people) 

150-200g raw prawns 

500ml homemade chicken stock

1/2 small butternut squash 

1 small courgette 

1/2 white or red onion 

2-3 cloves of garlic 

1/2 red chilli 

Small bunch of corriander 

Small bunch of chives 

Splash of sesame oil 

Pinch of salt 

Method to the madness 

Preheat oven to 200C 

Peel and spiralize the butternut  

Bake 1/4 of the butternut noodles splashed with a little oil and salt for about 5-7 minutes, until crisp (perhaps not as crispy as mine were)

Finely slice the courgette, onion, chilli and herbs, crush the garlic

Place the chicken stock in the saucepan and bring to the boil, add the butternut noodles, onion and some chilli slices (saves some for garnish) turn down to a simmer 

Heat the fry pan to a high heat, add a splash of sesame oil and the prawns, garlic and a pinch of salt. Cook until the prawns have turned pink, only a few minutes 

Once the prawns are cooked turn off the soup and serve into bowls. Add the courgette, fresh herbs, prawns and crispy butternut on top of the soup and serve
