Satay Prawn Salad 

I actually made this satay sauce yesterday, for another dish. Although that dish, as a whole didn’t work, so today I used the sauce with prawns. It was fantastic. You all know how to make a salad I know, and I’m sure you’ve all made a satay sauce before, but this one is really delish, easy, plus gluten and sugar free. Try it out and let me know what you think. 

Equipment required 

1 lrg fry pan 

1 small saucepan 

Shopping list (for 2 people) 

150-200g of raw prawns 

Splash of sesame oil 

2 lrg handfuls of kale 

1 lrg carrot 

1 avocado

Juice of 1 lemon 

Pinch of good quality salt

For the satay sauce (makes more than you need for the recipe, you can do half the quantity if you like. I prefer to cook a big batch and use it with other dishes)

1 red chilli 

1/3 cup crunchy peanut butter, no added sugar or oil 

2/3 cup of coconut milk 

1 tbsp of brown rice syrup 

1-2 tbsp tamari to taste, I used 2 

Juice of 1/2 – 1 lime to taste, I used 1

Method to the madness 

De seed and finely dice the chilli 

Heat the saucepan to a medium heat, sautée the chilli until slightly soft with a small amount of sesame oil

Add the remaining ingredients and heat until warm and liquid, taste the sauce after the addition of the first tbsp of tamari and also after the first half of the lime, adjust the recipe if needed. Once warm remove the sauce from the heat 

Meanwhile, place the kale in a large bowl and massage with the juice of one lemon and a good pinch of salt, massage it for 2-3 minutes until it softens 

Dice the avocado and finely slice the carrot, mix through the kale 

Heat the fry pan to a high heat, stir fry the prawns in a small amount of sesame oil for only 1 minute and then add 2-3 tbsp of the satay sauce – once the prawns are cooked through remove them from the heat 

Plate up the salad by evenly dividing the salad mixture among the bowl and then topping with the saucey warm prawns
