Curried Mince with Zoodles 


Curried Mince Zoodles 

Nothing planned for dinner, but lots of things in the cupboard and mince in the fridge – voila! Curried mince couldn’t be easier or yummier. The kids had theirs with thick rice noodles instead. Packed full of veges and flavour it’s sure to be a family favourite.

Equipment required 

1 large fry pan 

Spiralizer 

Grater 

Shopping list for 4 people 

450g mince 

1 onion 

2 cloves of garlic 

5 medium courgettes 

2 medium carrots 

3 tbsp mild curry powder 

1 tbsp maple syrup or rice syrup 

2 chicken stock cubes 

1 tin of coconut milk 

Oil of choice 

Method to the madness

Dice the onion and garlic and sweat off in the fry pan at a medium heat

Once softened add the mince and brown 

Meanwhile grate 2 courgettes and 2 carrots 

Add the curry powder once the mince is browned and toast it for 1-2 minutes 

Add in the grated vegetables,  coconut milk, stock cubes and syrup, mix well and taste for seasoning 

Let the mince summer on medium low for about 15-20 minutes 

Spiralize the other courgettes and toss through the sauce once ready to serve 

I topped mine with some seeds and parsley but you could use crispy shallots or crushed nuts – yum!
