Cheesey Zoodles/Courgetti 

If you love cheese as much as I do, dont walk, run to make this dish. Super simple and quick to make, it will be sure to become a family favourite in no time. This recipe was inspired by Food Faith Fitness

Equipment required 



Medium saucepan 

Shopping list for 2 people 

2 lrg Courgette/zucchini 

20g of Parmesan cheese 

50g cheddar cheese 

2 tbsp natural yoghurt 

6-8 sundried tomatoes 

1 tsp Italian herbs 

1 heaped tsp of potato starch or other thickener 

Method to the madness 

Grate the cheese and melt on a low temp in the saucepan

Roughly dice the sundried tomatoes and add to the cheese with the herbs and yogurt, mix 

Meanwhile spiralize the courgette 

Once the cheese mixture is melted add in the courgette and turn the heat a little higher – it will now become a little watery, don’t worry, add in the potato starch and mix well, add more if needed 

Cook for a few minutes until the courgette is tender 

Serve on its own with some basil pesto or as a side to a protein
