Mediterranean Protein Frittata 

I’ve been playing with protein powders lately, it’s an easy way to add more protein to your diet, but it can be tricky to work with. These are super simple and tasty, great for breakfast, a snack on the go or a light lunch with a salad. 

Equipment required 

12 hole cupcake or muffin tray 

Mixing bowl 

Shopping list makes 12 

4 eggs 

1/2 cup grated cheddar 

1 large courgette 

6-8 sundried tomatoes 

Small bunch of sliced basil (optional) 

1/4 cup of rice protein

1/4 cup of milk 

Seasoning 

Method to the madness 

Preheat the oven to 180C 

Grease the tin with ghee or butter 

Grate the courgette and cheese 

Dice the sundried tomatoes 

Mix all the ingredients together and pour into the tin, spreading the mixture evenly 

Bake for approx 12 minutes until the middle is just firm 

Eat them on their own or with your favourite side 

ENJOY!
