Chicken Meatballs

Chicken Meatballs 

Making your own meatballs couldn’t be easier, they are simple snacks that can be made ahead of time and eaten on the go. You can also add them to your favourite pasta sauce. The flavour combos are endless, these are very simple but incredibly tasty.

Equipment required

1 high powered blender 

Baking tray

Fry pan

Shopping list 

4 skinless and boneless chicken thighs 

1 egg 

1 tsp of onion powder 

1 tsp ground cumin

Small bunch of parsley 

Good pinch of salt 

Oil of choice 

Method to the madness 

Preheat the oven to 180C 

Slice the chicken thighs and place them in the blender along with the remaining ingredients (except the oil)

Blend on a low speed, increasing it slowly until you get a thick paste 

Heat the fry pan to a medium heat and add oil of choice, I used avocado, dollop some mixture into the pan and brown on each side

Onced browned place the meatball in the oven for about 15 minutes, until cooked through 

Serve on their own as a snack or with your fab low carb side as a main
