Lemon & Chia Almond Cake 

A quick an easy cake that is ready in less than 25 minutes and doesn’t take any fancy equipment – here it is! This cake is delicious by itself or serve it with some clotted cream or natural yoghurt. Perfect for an occasion or just because. 

Equipment required 

1 small saucepan or microwave and bowl 

1 zester or grater 

20 cm round cake tin

Shopping list 

200g almond flour 

75g butter 

3 eggs 

2 tsp baking powder 

1 tsp vanilla 

Zest of 5 lemons 

1 tbsp chia seeds 

4 tbsp brown rice syrup or maple

 Method to the madness 

Preheat the oven 170C

Grease a 20cm cake tin and line the base with baking paper

Zest the lemons, put the zest in with the butter into a saucepan or microwave bowl and melt

Once the butter is melted remove it from the heat and let it cool a little, now stir in the syrup and vanilla 

Whisk the eggs separately 

Now add all the remaining ingredients and stir 

Bake in the oven for 20 minutes 

Leave it to cool in the tin for 10 minutes and then remove, serve warm or room temperature
