Peanut Butter & Chocolate Slice 

Peanut butter and chocolate – hands up if you don’t like that combo? No one, ok let’s move on. This slice is super easy to make and is guaranteed to please whomever you serve it up to. I used shop bought 85% organic chocolate for the top, but you could easily make your own chocolate to make it completely sugar free. 

Equipment required 

1 square baking tin, approx 20cm x 20cm 

Baking paper 

Small saucepan or microwave bowl 

Shopping list makes 25 squares 


200g ground almonds 

2 tbsp brown rice syrup 

2 tbsp coconut oil 

Peanut butter layer:

2/3 cup of crunchy natural peanut butter 

2 tbsp brown rice syrup 

1 tbsp coconut oil 

Pinch of salt 

Approx 1/4 cup of water 

Choc topping:

100g of 85% or higher dark choc, or homemade 

Pinch of salt 

Method to the madness 

Preheat the oven to 190C 

Melt the coconut oil for the base and stir the almonds and syrup in. Once combined press down firmly into a lined baking tin, try to get the base as even as possible 

Bake the base for about 10 minutes until lightly golden, once the base is cooked leave it to cool 

Warm up the peanut butter and coconut oil either in the microwave or a saucepan, add in the syrup and a pinch of salt – taste and adjust as needed. Add in the water and stir to incorporate the water fully, you should have a spreadable paste consistency, add more water if needed 

Once the base has cooled spread the peanut butter over the base, set aside 

Melt the chocolate and add a pinch of salt, taste, pour over the peanut butter layer evenly 

Place the slice in the fridge to set – cut into squares
