I’m not actually sure what defines a granola as a granola – oats, fruit, spicing? So I’ve left this in inverted commas. This is a super simple breakfast or snack option that is vegan friendly while offering a great protein punch. It should store in an airtight container for at least a week on the bench. 

Equipment required 

2 flat baking trays 

Baking paper 

1 small saucepan 

Shopping list 

250g of mixed nuts, preferably activated 

1/2 cup of coconut flakes 

1/2 cup of sunflower seeds 

1/2 cup of pumpkin seeds 

2 tbsp of coconut oil 

2 tbsp of brown rice malt syrup 

1 tsp of ground ginger 

1 tsp vanilla powder 

2 tsp of ground cinnamon 

Sprinkle of sea salt 

Method to the madness 

Preheat the oven to 170C 

Melt the coconut oil in a saucepan and add the syrup and spices – turn the heat off once melted 

Place the remaining ingredients, apart from the salt, into the saucepan and mix 

Spread the mix over the lined baking trays and bake for about 20 minutes, turning the mixture half way through 

Once baked sprinkle with a little sea salt and let it cool. 

Serve with natural or coconut yogurt or eat it on its own!
