I could never blame the Cookie Monster for eating all those cookies, who could resist. These cookies are quick and easy, low in fructose and can actually be made fructose free if you make your own chocolate – I’ll put up a recipe for that later. These can be whipped up in 15 minutes flat, no excuses to reach for store bought.
2 flat lined baking trays
1 food processor
Shopping list makes 12 cookies or more if you make them smaller!
200g almond meal
A little less than 1/2 cup of coconut oil
2 tsp vanilla paste
1 tsp xantham gum
4 tbsp of brown rice syrup
1/4 cup of chocolate chips
Method to the madness
Pre heat the oven to 180C
Simply process all ingredients except the choc chips until a dough forms, stir in the choc chips to make sure it’s fully incorporated
Roll the mixture into even sized balls and press firmly down in your hand to make a cookie shape
Place the cookies on the lined baking trays and bake for 12 minutes, checking them at around 8 minutes depending on their size
Serve on their own or with a yummy glass of warm almond milk
