Green Bites 

 
Green Bites 

Based on a recipe by Sarah Wilson in her book Simplicious, these green bites are a delight. They are easy to make and are a great snack or light meal. 

Equipment required 

1 large mixing bowl

2 baking trays lined 

Shopping list (makes 20 bites)

1 sml head of broccoli  

1 sml bunch of fine asaparguas

2 spring onions 

100g of cheddar, grated

50g of Parmesan, grated 

4 medium eggs 

1/2 cup of sesame flour

1/2 cup of almond flour

1 tsp dried oregano 

Seasoning 

Method to the madness 

Preheat the oven to 190C

Roughly chop the broccoli into small pieces, chop the asaparguas and spring onion finely 

Mix all the ingredients together and shape into balls, place the balls on the baking trays 

Bake until golden, about 25 minutes 

Serve by themselves or with a side salad. I served mine with tomatoes, mayo and chives
