Beetroot Chips 

Who doesn’t love beetroot! These little red balls of goodness are so versatile, you just have to think outside the box. I thought the only way to eat beetroot was pickled until a few years ago. These chips are quick and easy to make and kids will love them too! 

Equipment required 

1 mandoline 

2 baking sheets

Baking paper 

Plastic bag

Shopping list (makes a large bowl) 

2 large raw beetroots

Splash of oil of choice, I used groundnut 

Salt

Nutrional yeast (optional) 

You could also add herbs to flavour 

Method to the madness 

Preheat your oven to 190C

Finely slice your beetroot on the thinnest setting on the mandoline 

Line the baking trays with paper

Place the beetroot into the bag and splash with some oil 

Lay the beetroot onto the tray in a single layer, season with a small amount of salt 

Bake for 15 minutes, checking on them regularly 

Sprinkle on the nutrional yeast and crunch away 

ENJOY!

      1. Oh. I want to know more! About a year and a half ago I had very low vit b and I experienced some not so great complications.

    1. It’s one of those things that you think will just sit in the cupboard, but it really comes in handy! Aubergine is one of the best things to use it for I find. Perfect for replacing pasta in a ‘lasagne’ or eaten as chips also! Xx
