Vegan fried ‘rice’ 

We all need to eat more veges, I’m sure you’ll agree. Here’s a recipe that will not only increase your vege intake, but also your raw vege intake. I get bored of eating crudités, don’t you! 

Equipment required 

A food processer or grater 

1 lrg fry pan 

Shopping list for 2 people 

1 head of broccoli 

200g of your favourite mushrooms 

1 medium carrot 

1 medium red pepper 

4 salad onions 

1 tsp ground ginger 

2 tsp maple syrup 

1 tbsp tamari 

2 small handfuls of raw nuts 

Oil of choice, I used ground nut oil 

Method to the madness 

Process or grate the broccoli so it resembles a rice consistency 

Thinly slice the carrot and salad onion, dice your red pepper and mushrooms 

Heat your fry pan to a medium high heat

Fry off the mushrooms with a small amount of oil 

Once the mushrooms are nearly cooked add the broccoli and ground ginger, continue to cook for 2-3 minutes, add the maple syrup and tamari, taste for seasoning

Once the broccoli is cooked turn off the heat and stir through the remaining raw veges 

Top with a small handful of raw mixed nuts
