Blueberry Pancakes


Blueberry Pancakes 

I’ve made a few versions of pancakes, this is a favourite. They are much fluffier than when using just nuts, so they feel more like a traditional pancake. The combo options are endless, so be creative.

Equipment required 

1 sml mixing bowl

1 lrg fry pan

Shopping list for 1-2 people depending on hunger!

1 tbsp of coconut flour

2 tbsp of ground almonds

1/4 tsp of baking powder

1 pinch of salt

2 eggs

2 tbsp of milk (you could use coconut milk or other non dairy alternative)

1 tsp vanilla

1 tbsp of maple syrup

2 handfuls of blueberries

Oil of choice, I used ghee

Method to the madness 

Mix the dry ingredients together

Beat the eggs in a seperate cup and then add to the mixture with the remaining ingredients

When mixing, make sure you try to squash some of the blueberries

Heat the pan to a medium heat with oil of your choice

Dollop the batter into the pan, let it cook until you see bubbles rise in the mixture, then flip and cook on the other side until golden

Serve with your choice of topping, I used natural yogurt, some fresh blueberries and a swirl of maple
