Cheesey Asparagus Fritters 

We all know I love a fritter, I had these for breakfast this morning. My son also loves fritters and helped me polish them off.

Equipment required 

1 large fry pan
1 grater
1 small mixing bowl

Shopping list for 2 people

150g of asapargus
1 salad onion or small white onion
2 tbsp of quinoa flour
1 handful of grated mature cheddar cheese
3 eggs
Oil of your choice, I used left over bacon fat (sorry veges)

Method to the madness 

Slice the asapargus finely, dice the onion

Heat the fry pan to a medium high heat with a splash of oil

Mix all the ingredients (not the oil) together with some salt and pepper

Once well combined, spoon the fritters into the hot oil, I used 1 tbsp of mixture per fritter

Once the fritter bubbles on top and the bottom is golden, flip it and cook until golden on the other side

Serve with some avocado and lemon to give the dish a lift. I also served mine with bacon (sorry veges)
