Paleo Banana Pancakes

Who doesn’t love a pancake! Actually one of my favourite breakfasts, who knew I could still indulge. While these aren’t quite as good as the devilishly gluten laden classics, they certainly hit the spot. A tasty protein packed treat the whole family will love.

Equipment required

1 large non stick frying pan
1 mixing bowl

Shopping list for 2 people

3 eggs
1 lrg banana
1/4 cup almond flour

Streaky bacon (optional)
Pure maple syrup (optional)

Method to the madness

Heat the frying pan to a medium high heat and fry the bacon until crispy, remove from pan keeping the fat

Meanwhile mash the banana in the mixing bowl, add the eggs and almond meal and mix well

Turn the pan to a medium heat, spoon the mixture into the pan into 2 pancakes if a very large pan, or if smaller pan cook in 2 batches. Cook for approx 2 mins each side, until golden and soft

Serve topped with the bacon and some pure maple
