Apple & Date Muffins


Apple & Date Muffins

These little beauties are a must try. Packed with flavor, no sugar, super easy, couldn’t get much better. A special treat for those strict low carbers

Equipment needed

Muffin tray
Mixing bowl
Hand blender, chopping attachment or food processor

Shopping list makes 9 muffins

1/2 cup ground almonds
1/2 cup ground hazelnuts
1/2 cup desiccated coconut
2 tsp baking powder

10 dates, pitted
1 banana
10 quarters of dried apple
1 tbsp honey
3 eggs

Method to the madness

Preheat the oven to 180C

Grease the muffins tins, if not non stick, this mixture is sticky so grease it well

Place the dates, banana, dried apple and honey into the blender, blitz until you get a semi smooth consistency

Add the eggs to the wet mixture and combine

Then add the wet mix into the dry mix and combine well

Use a tbsp and spoon the mixture into the muffin tin

Bake for 20 mins, leave to cool in the tin for 10 mins
