Paleo Cottage Pie


Paleo Cottage Pie

Traditional comfort food can be hard to come by on a low carb diet. This dish will fill that hole. Suitable for the whole family this recipe is a must for all low carbers

Equipment required

1 medium deep base baking tray
2 medium deep based saucepans
1 hand blender or similar

Shopping list serves 4 people

500g of minced beef
2 medium carrots
2 medium white onions
2 stalks of celery
2 cloves of garlic
1 tbsp of tomato paste
2 beef stock cubes
1 large head of cauliflower
1 tbsp mayonnaise (optional)
Dollops of butter
Enough water to cover mince

Method to the madness

Heat the pan to a medium heat, dice the onion, carrot, celery and garlic

Sauté the veges until the are translucent

Add the mince and brown, once the mince is browned add in the tomato paste and cook for a further 1-2 minutes

Cover the mixture with water, add 2 stock cubes. Bring to the boil, then turn down to low and let the mixture simmer until most of the liquid has evaporated

Pre heat the oven to 200C

Chop the cauliflower and cook until soft in seasoned boiling water. Once the cauliflower is soft, drain and blitz the cauliflower until smooth, stir in the mayo and taste for seasoning

Spoon the mince into the baking tray and smooth it until it is level, top with the cauliflower mash

Dot some butter on top of the cauliflower

Bake the dish for approx 30mins until the top goes slightly golden

Serve by itself or alongside your fav side
