Fennel Fritters


Fennel Fritters

Reading this blog you would know my love for fritters will never end. My current obsession is fennel, so I thought I’ll pop it in a fritter. The result is a tasty, slightly sweet treat that is great by itself or as an accompaniment .

Equipment required

1 large fry pan
1 mixing bowl

Shopping list makes approximately 6 fritters

1 large fennel bulb
1/2 large onion
1 tsp of thyme
1 tbsp of gluten free flour
1 large egg
1 tbsp of water
Veg oil
A sprinkle of your fav grated cheese (optional)
A dollop of creme fraiche (optional for garnish)

Method to the madness

Thinly slice the fennel (a mandolin is best for this but can be done by hand) and dice the onion

Place all the ingredients in the mixing bowl and mix thoroughly – use more water if needed, you want a thick batter consistency

Season the mixture well

Heat some oil in the fry pan, enough oil to coat the surface of the pan

Once the heat is medium-high use a tbsp to spoon the mixture into the oil

Fry the fritters for approximately 3 mins each side, until golden and cooked through

Serve hot with a dollop of creme fraiche or alongside your fav low carb dish
