Mexican Sweet Corn Soup


Mexican Sweet Corn Soup

This recipe is best for those on a medium carb intake. Sweet corn is a bit of a treat on a low carb diet, lets be honest. This is a really tasty soup that is ready in a flash. Serve with some crisped low carb tortillas for a crunchy garnish. Yum town!

Equipment required

1 medium non stick deep based saucepan
1 hand held blender

Shopping list 4 people

500g corn kernels frozen or non sweetened tinned
1 red chilli
1 lrg onion
2 stalks celery
2 cloves diced garlic
1 lrg squeeze tomato paste
1 tsp coriander
1.5 cups vege or chicken stock
Squeeze of lime juice
Sourcream and grated manchengo cheese to garnish (optional)

Method to the madness

Defrost the corn, if using frozen

Dice the onion, garlic and celery, sauté on medium heat until just soft

De seed the chili and dice, add to the pan with the tomato paste and coriander, cook for 1-2 minutes

Add the corn and stock, bring to the boil and simmer for a few minutes

Blend the soup well, taste for seasoning, add lime juice, add more stock if you prefer a thiner consistency

Serve with grated cheese and sour cream.
