RFC – Rossen Fried Chicken

Fried chicken, yummmmy! Lets be honest nothing beats the Cornel but here is my attempt.

Equipment required

1 medium deep based saucepan
1 mixing bowl
1 large fry pan or deep fryer

Shopping list for 2-4 people

4 chicken thighs
4 chicken drumsticks
1/2 cup of buckwheat flour
2 tsp of garlic power, dried thyme, paprika
Generous pinch of salt and white pepper
1 egg

Oil for shallow frying

Method to the madness

Place the chicken pieces in the pan and cover with water. Add 1 or 2 generous pinches of salt

Bring the water to the boil, turn to a medium high heat and simmer for 20-30 mins depending on how big your chicken pieces are

Mix all the spices and seasoning with the flour

Drain the chicken, let it rest while you heat up the fry pan to a medium high heat with a good splash of oil, enough to cover the base

Very carefully, as it is hot, dip the chicken in the egg and then into the flour mix

Fry the chicken on oil sides until crispy

Serve along side your fav low carb side
