Green Curry Chicken Burgers

Green Curry Chicken Burgers

These tasty chicken burgers will delight. The green curry spices lift the burger and you don’t need coconut milk that can ramp up the fat content of a dish.

Equipment required

1 mixing bowl
1 hand blender chopping attachment
1 medium non stick fry pan

Shopping list for 2-3 people

600g of chicken mince
1 egg
1 lime

For spice paste

1 small piece of fresh ginger
1 green chilli
2 lemon grass stalks, white part only
1 small bunch of coriander & basil
1 small onion
1/2 tsp of ground cumin and coriander
Generous pinch of salt
Sprinkle of white pepper

Method to the madness

Place all the spice ingredients in the blender and pulse until you get a fine pulp

Mix the spice paste in with the chicken mince and egg

Form the mix into even patties

Heat the pan to medium heat and cook the patties on both sides until cooked through, about 10 mins in total depending on size of patty

Serve topped with a squeeze of lime on each patty and you fav low carb side

I served mine with sweet potato chips and courgette
