Spiced Quinoa with Aubergine

The photo doesn’t do the dish justice… Quinoa truly is a super food, so if you are on a moderate carb intake it’s wise to have some tasty recipes up your sleeve. Low fat, easy to prep, high protein and a range of other positives makes quinoa an easy choice. This recipe is super tasty, it takes around 30 mins to prep and should be a real crowd pleaser.

Equipment required

1 lrg non stick fry pan
1 medium non stick deep based saucepan with lid

Shopping list for 2 people

1/2 cup quinoa
1/2 tsp of ground turmeric, cumin & lemon pepper seasoning
1 tsp paprika
1/2 chicken or vege stock cube
1 cup of water
1 garlic clove
1 aubergine
1 sml onion diced
Vege Oil

Method to the madness

Heat the fry pan to a high heat

Slice the aubergine into slices about 1/2cm thick

Splash some oil over the slices on both sides and fry until golden, leave to side

Slice the garlic clove and fry once aubergine is cooked

Dice the onion

Place slices of the aubergine on the bottom of the sauce pan, sprinkle some onion and garlic and half the quinoa

Repeat the process so you have 2 layers

Add the spices, stock and water

Bring the saucepan to the boil, once boiling replace the lid, turn to low and cook for a further 15 minutes

Turn the heat off and let it stand for a further 5 minutes

Serve alongside your fav protein or as is
