Curried Prawns


Curried Prawns

I think in another life I was of Asian descent with all the curry’s I eat! This one is a cheats recipe using a simple spice blend.

Equipment required

1 medium fry pan

Shopping list for 2 people

200g of green prawns – deveined
1/2 ripe plantain
1/2 lrg red Chilli
1 medium bulb of fennel
1.5 tsp of mild curry spice powder mix
1/3 cup of coconut milk
1/3 cup of water
1 tsp coconut oil
Salt to taste

Method to the madness

Heat the pan to a medium heat with the oil

Peel and dice the plantain

Thinly slice the chilli

Slice the fennel in half and de core, slice on finest blade

Cook the plantain for about 5 minutes

Add in the curry and chilli and fry for about 30 seconds

Turn heat to high

Add in the coconut milk and water mix well then add the prawns

Cook until prawns have turned pink, about 2 minutes depending on the size

Add the fennel and toss through before serving

Serve as is or alongside your fav low carb side
