Mustard Rack of Lamb

Lovely lamb… I don’t cook with it a lot but have had it twice in the last week or so! Rack of lamb is my fav cut of lamb. In fact we served it at our wedding. This is an easy peasy crust for the lamb, delish!

Equipment required

1 lrg baking tray
1 lrg fry pan

Shopping list for 2 people

2 medium racks of lamb
2 tsp of hot English mustard
2 tsp of olive oil
Large pinch of ground cumin
Pinch of salt

Method to the madness

Take the lamb out of the fridge about 1hr before cooking

Mix the ingredients for the crust, taste to ensure right balance of flavours

Smear the mustard mix onto the top side of the lamb

Pre heat the oven to 180C

Place a splash of oil into fry pan

Heat the pan to a high heat

Place the meat crust side down and cook until caramelised

Turn to seal the bottom side

Once coloured transfer to baking tray, leave the top side up

Bake for about 15 mins for medium rare

Leave to rest for 5-10 mins before serving

Serve alongside your fav low carb sides
