Chicken & Sweet Potato Curry

I make a lot of curries, I find them delish, satisfying and simple. Here’s another… This one uses cupboard ingredients for the spices so no need to buy all the fresh herbs

Equipment required

1 medium deep based non stick saucepan with lid

Shopping list for 2-3 people

2 chicken breasts skinless
1 medium sweet potato
1 lrg fennel bulb
1 medium onion
1 handful of baby spinach
1 lrg clove of garlic crushed
250ml coconut milk
250ml of water
1 chicken stock cube
1.5 tsp turmeric
1 tsp ground ginger, coriander
1/2 tsp of cumin

Method to the madness

Dice the sweet potato and chicken into pieces about 1 cm across

Dice the onion and fennel finely

Heat the pan to medium high heat and cook the onions, add the chicken and spices, cook for 1-2 mins

Add in the remaining ingredients, apart from the spinach, put the lid on and bring to the boil

Once boiling turn to a medium low heat and let it simmer for 20 mins until the sweet potato is tender

Turn the heat off and add the spinach

Serve with your fav low carb side and topped with crispy shallots (optional)
