Beef & Red Pepper Aubergine

I have posted a recipe for stuffed aubergine before. This is another tasty version without dairy, so paleo friendly!

Equipment required

1 medium non stick deep based saucepan with lid
1 baking tray

Shopping list for 2-4 people depending on sides

2 lrg aubergines
1 lrg onion
2 whole roasted red peppers
1 beef stock cube
1 tsp of dried rosemary and oregano
Sprinkle of crushed almonds (optimal)
Splash of oil

Method to the madness

Preheat the oven to 200C

Slice the aubergine in half length ways

Take a sharp nice and slice into the flesh of the aubergine without cutting the skin, make a criss cross pattern about .5 cm apart

Splash a little oil over the top of the aubergine

Bake for about 30 mins until the flesh is soft

In the meantime heat the fry pan to a medium high heat. Dice the onion and cook until soft, add the beef and fry until you have a nice colour

Dice the red pepper and add to the mix with the herbs and stock cube

Turn the heat down and let it simmer with lid on

Once the aubergine is cooked remove from the oven, use a tbsp and scoop the flesh into the beef mix

Take the mixture and pile it back into the aubergine case, top with a sprinkle of almonds

Bake for about 5-10 mins until you get some colour on the almonds

Serve with your fav low carb side
