Beanless Chilli

Feels like an age since I last posted! Lost phone, business trip and laziness all contributing factors! Here is an excellent to recipe to kick off June. Super flavorsome, a sure fire hit for carnivores. I served this with quinoa, but you can use whatever tickles your fancy.

Equipment required

1 medium deep based saucepan with lid

Shopping list for 4 people

500g beef mince
180g of gluten free spiced sausage, I used merguez, chorizo would work too
2 medium onions
1 tin chopped tomatoes
1 beef stock cube
1 tsp of thyme, oregano, coriander, cumin, cayenne pepper
1 tbsp cocoa powder
1 avocado (optional)

Method to the madness

Dice the onions and sausage

Fry off the sausage until you get a nice colour, add the onions and cook until soft

Add the mince and cook until browned

Add the spices, stock cube, cocoa powder and tomatoes

Bring the mixture to the boil then turn down to low and put the lid on

Simmer, stirring occasionally for at least 40 mins but longer if possible, up to 1 hour

Serve along with your fab low carb side and topped with avocado slices
