Mushroom Soup


Mushroom Soup

Another excellent soup that will warm your cockles. Using a mixture of mushrooms adds a real depth of flavour. Try the mushroom powder for a bit of fun.

Equipment required

1 lrg deep based saucepan
1 sieve
1 medium deep based saucepan
1 hand blender, with chopping attachment
1 small baking tray

Shopping list for 4 people

400g of mixed mushrooms
1 lrg onion
2 lrg cloves of garlic
50 mls of Marsala
750 mls of vege or chicken stock
1/4 cup of milk
Splash of vege oil

Mushroom powder

2 tbsp of dried mushrooms, such as porcini

Method to the madness

Heat the oven to 150C

Place the dried mushrooms on the tray and bake for 5 minutes

Once cooked process the mushrooms in the chopper attachment, then pass through a sieve

Slice the mushrooms, dice the onion and garlic

Heat the large saucepan to a medium high heat, soften the onion and garlic for 2 minutes

Add the sliced mushrooms and cook for a further 3-5 minutes, add in the Marsala and cook it off until the liquid is absorbed

Add in the stock and bring to the boil. Leg it simmer for 10 minutes

Add in the milk and blend the soup, taste for seasoning

Pass the soup through the sieve and leave to warm through in secondary pan until ready to serve

Serve with a sprinkle of mushroom powder on top. ENJOY!
