Vege Lentil Curry


Vege Lentil Curry

This is a slight cheat, using a curry paste. The result is still super tasty and ready in 10 minutes, hard to beat.

Equipment required

1 medium deep based saucepan
1 small non stick fry pan

Shopping list for 2 people with a side

1 tbsp of yellow curry paste
50g of halloumi or paneer
1 onion
80g of fresh shiitake mushrooms
1 handful baby spinach
2 tbsp of lentils
1/2 cup of coconut milk
1/2 cup of water
Sprinkle of fried onions (optional)

Method to the madness

Cut the halloumi into cubes, the size is up to you

Heat the fry pan to a high heat and dry fry the halloumi, set to the side

Dice the onion, slice the mushrooms

Turn the pan onto a medium high heat, fry the paste for 1 min, then add the liquid, stir, add the lentils

Add the onions and cook for a further 3 mins, add in the mushrooms

Once the lentils are tender add in the spinach and halloumi

Serve with your fav low carb side. I used broccoli, cauliflower rice would also work well. ENJOY!
