Asparagus & Feta Frittata


Asparagus & Feta Frittata

A quick and easy meal that will put a smile on dial. Making use of the fantastic fresh asparagus this season is a must.

Equipment required

1 medium non stick fry pan

Shopping list for 2 people

6 eggs
50g crumbly feta
Small bunch of fresh asparagus
1 onion
Splash of milk
Good pinch of salt
Pepper to taste
Splash of vege oil

Method to the madness

Heat the oven to 200C

Heat the pan to a medium high heat

Dice the onion finely, chop the bottoms of the asparagus into pieces about 1cm long, leave the tips whole

Splash the pan with a little oil and fry the asparagus and onion for about 3 mins, add the tips after 2 about minutes, you want the asparagus a little under still

Meanwhile mix together the egg, milk, seasoning and feta

Turn the heat to medium and pour the egg mixture over the vegetables

Do not stir, let this cook until the side have started to set, then pop it in the oven for about 5-10 minutes depending on how you like it cooked, i like mine to still be a little runny in the middle

Serve alone side your favourite salad, or just on its own. ENJOY!
