Chorizo & Braised Fennel


Chorizo & Braised Fennel

This is a simple and delish side dish, starter or snack. I had it alongside some chicken and it complemented it extremely well.

Equipment required

1 large fry pan with lid

Shopping list for 2 people

150g of chorizo sausage
2 lrg fennel bulbs
1/2 cup of water
1/2 chicken stock cube
Sprinkle of dried thyme
Squeeze of lemon juice (optional)

Method to the madness

Heat the fry pan to a high heat

Dice or halve the chorizo, fry until it gets a nice colour

Remove the chorizo from the pan and discard most of the oil, leave about 1 tsp

Remove the core and fronds of the fennel and slice into thin wedges

Add to the hot pan, fry for 1-2 mins in the chorizo oil

Add in the water, stock cube and thyme, put the lid on and let it cook for about 3 minutes

Take the lid off and cook the fennel until the liquid has evaporated

Add the chorizo back into the fennel and stir through

Serve along side your fav protein or on its own. ENJOY!
