Pork & Fennel Delight

Clearly I didn’t know what to call this, a stew, a ragout, who knows, it definitely was delightful! Fennel is my new obsession so you will see it feature heavily this week. I have mentioned before that I don’t like raw fennel, so if you are put off by the aniseedy taste, don’t be. Cooked fennel is a whole other story of goodness. This dish is going to be locked into the meal rotation for sure!

Equipment required

1 deep based saucepan with lid

Shopping list for 3-4 people

500g lean pork mince
2 small onions
2 cloves of garlic crushed
1 lrg bulb of fennel
2 tsp of dried thyme
1 tsp of paprika, cumin and coriander
500mls of chicken stock
500mls of vege stock

Method to the madness

Heat the pan to a high heat, brown the mince

Dice the onion and fennel, discarding the core and fronds of the fennel

Once the mince has some colour add the crushed garlic and spices to the mince, stir for 1-2 minutes

Add in the fennel and onion, fry for a further 2 mins

Add the vege and chicken stock, put the lid on the pan and bring it to the boil

Let it simmer with the lid on for about 5 mins then remove the lid and let the liquid evaporate

Once the liquid has evaporated you should have a delicious mixture of glossy pork mince. Serve alongside celeriac mash or your other fav low carb side. ENJOY!
