Curried Lentil Soup


Curried Lentil Soup

A quick and easy soup that is great for those chilly snow days. High in protein and packed with flavour this is a great soup for those veges out there.

Equipment required

1 medium deep based saucepan with lid
1 small fry pan
1 hand blender

Shopping list for 4 people

1 cup of green lentils
1 onion
2 cloves of garlic
1 lemon grass stalk
1 vege stock cube
3 cups of room temp water
1/3 cup of coconut milk or cream
Pinch of salt

Knob of butter
1 tsp of mild curry powder
1 tsp of paprika

Method to the madness

Dice the onion and garlic, heat the saucepan to a high heat and cook the onion and garlic until softened

Add the lentils, lemon grass, stock cube and water, bring to the boil. Once boiling turn the soup down to a medium heat and place the lid on, let it simmer for about 20 mins until the lentils are cooked through

Once the lentils are tender remove the lemon grass, add in the coconut milk, pinch of salt and blend until smooth

Melt the knob of butter in the fry pan, add the spices to toast for 1-2 mins

Stir the spice butter through the soup, taste for seasoning. ENJOY!
