Cauliflower Smash


Cauliflower Smash

Cauliflower is an excellent low carb vege but it can sometimes be a little bland. This recipe is really flavoursome, easy and will please even a vege-phobe.

Equipment required

1 medium deep based saucepan
1 small non stick fry pan

Shopping list for 2 people as a side

1 medium head of cauliflower
4 rashes of pancetta
1 tsp of capers
Squeeze of lemon
Parmesan shavings to taste

Method to the madness

Cut the cauliflower into florets

Boil some salted water, enough to cover the cauliflower

Once boiling add the cauliflower

Heat the fry pan to a high heat

Thinly slice the pancetta and fry until crisp, once crisp turn the heat off, leave in pan

Chop the capers roughly

Once the cauliflower is cooked, drain well, leave it in the saucepan and slightly mash with a fork. Don’t break it all up, just a few squashes to give different textures

Add the capers and a squeeze of lemon to the fry pan, mix well

Add the pancetta and caper mix to the cauliflower, mix through

Serve garnished with Parmesan shavings. ENJOY!
