Quick 5 Spice Duck Salad

This dish is ready in about 5 minutes, low fat and low carb… Sounds too good to be true, but it is. With the help of a few cheats this yummy dish is perfect as a starter or light main.

Equipment required

1 non stick fry pan

Shopping list for 2 people

175g skinless duck mini fillets
2 tsp 5 spice
2 spring onions
1 red chilli
Small bunch of coriander
100g marinated chopped tofu
1 tbsp hoisin sauce
Juice of 1/2 a lime
2 handfuls of iceberg lettuce
Pinch of salt

Method to the madness

Heat the pan to a high heat

Dust the mini fillets in the 5 spice and salt

Finely slice the spring onions, chilli and coriander

Shred the lettuce, assemble on the plate

Cook the fillets for 1.5 minutes each side, leave to rest once cooked

Turn the heat down to low and add the remaining ingredients, stir fry for 2 minutes

Assemble the mini fillets on the lettuce and top with the tofu mixture. ENJOY!
