Lizzie’s Lentils

Lentils are an excellent source of vegetarian protein, cheap and delish. This recipe is very tasty and comforting with the added benefit of being low fat. To explain the name, Lizzie is a friend of mine who suffers from gluten intolerance and she needed some good vege side dishes, so this is for her.

Equipment required

1 small non stick deep base saucepan

Shopping list for 2 people

1/2 cup green lentils
1 small carrot
1 stalk of celery
1 small onion
1 clove of crushed garlic
500mls vege or chicken stock

Method to the madness

Finely dice all the vegetables

Heat the pan to a medium heat, add the vegetables and cook for a few minutes

Turn the pan to a high heat, add the lentils and cover with the stock

Once the mixture has been boiling for a few minutes turn the heat down to low and let it simmer for about 30 minutes until the lentils are tender and nearly all of the liquid has been absorbed/evaporated.

Serve as a side dish with your fav protein or as a main. ENJOY!
