Rolled Veal with Apricot Stuffing

This recipe is a good alternative to the standard Sunday roast. With sweet nutty flavours to complement the meat it’s a no fuss dish with a bit of sparkle.

Equipment required

1 baking tray
1 hand blender chopping attachment or processor
1 mixing bowl
Kitchen string
Aluminium foil

Shopping list for 4 people

750g belly of veal

1/4 cup whole hazelnuts
6 dried apricots
1 small onion
50g feta

Splash of vege oil

Method to the madness

Pre heat the oven to 200 C

Halve and skin the onion, blend to fine dice, tip into mixing bowl

Add the remaining ingredients and blend until roughly chopped, mix all the ingredients in the mixing bowl, taste for seasoning

Place the stuffing to one side of the veal and roll it tightly, securing it with kitchen string

Rub some oil on the outside of the veal and season

Place the veal into the oven for 20 mins

After 20 mins turn the temp down to 170 C, cover with aluminium foil and cook for a further 40-45 mins

Once cooked remove from the oven and let it rest covered for 20 mins

Serve alongside your fav low carb sides, I used broccoli and mashed celeriac. ENJOY!
